It’s been quite some time since I felt like breaking out the charcoal chimney and lighting the fires. Today I felt like it. And it was great. Rubbed down some thighs and a breast with Yardbird Rub for dinner tonight. Also, rubbed some chicken breasts with adobo for enchiladas tomorrow. Smoking two racks of ribs with indirect heat on the new 26″ Weber Kettle. Here’s the racks ready to go. Already trimmed and rubbed with world famous Simply Marvelous Sweet and Spicy Rub. Close up of Big Brother Smokes fantastic rub: Started with a chimney of Lazzari Mesquite Lump. Man this stuff sparks like nothing I’ve ever used before. I don’t think I could use this in the summer months because of fire danger. This new 26 inch kettle is huge.
