A couple random Christmas food pictures

Last year we started having a low key Christmas.  With Charle’s birthday on Christmas Eve it just became to much to have his birthday and then a full blow “holiday dinner” on Christmas.  So now we get up, not to early, have some of Celeste’s awesome cinnamon rolls and then open presents.  After presents we have breakfast followed by an easy going morning.  A movie in the afternoon and then home for a simple dinner.  It’s made for two great Christmas Day’s in a row.

      NOTE: Celeste says this is a Pampered Chef recipe and came with the stoneware baking dish she bought. She’s never tried cooking it in anything else.

      Honey Pancake Puff

      3 tbl butter
      1 cup milk
      6 eggs
      3 tbl honey
      1 3 oz cream cheese (room temp)
      1 cup flour
      1/2 tsp salt
      1/2 tsp baking powder

      Preheat oven to 400 degrees. Grease deep dish baker with 1 tbl butter. Add remaining butter and place in oven until the butter sizzles.

      While dish is in the oven, place remaining ingredients in a blender. Blend at high speed for 1 minute. Remove dish from oven and immediately pour batter in to dish. Bake for 20 – 25 minutes until puffy and dark golden brown. Remove from oven and serve immediately with powdered sugar, syrup or fresh fruit.
