I’m working from home today. This means I get to make my own lunch the way I like it. When I on the road I don’t get to take my lunch and eating in restaurants gets a little boring at times. I figured a little Buckboard Bacon and Egg sandwich would hit the spot.
Started with some whole wheat bread and light mayo. Wanted this to be as healthy as possible. Since I used “light” mayo I also figured I could use twice as much of it.
